There are few dishes as simple and comforting as pasta with butter and cheese. It’s a great option when you’re coping with digestive problems. If you’re having trouble swallowing, try a small-shaped pasta, such as pastina or macaroni.
16 ounces fettucine or egg noodles
½ cup butter
⅓ cup reduced-fat Parmesan cheese (or ⅓ cup cottage cheese)
1 tablespoon chopped fresh parsley
Salt and pepper
- Thoroughly rinse fresh produce under warm running water for 20 seconds. Scrub to remove excess dirt, then set aside.
- Fill a large pot with lightly salted water and bring to a rolling boil. Cook pasta according to package directions. Drain and return pasta to pot.
- Add butter, Parmesan cheese, parsley, and salt and pepper to taste. Mix until well combined.
