
This low-in-fat hash brown is a good alternative to French fries.
Ingredients
1 sweet potato
1 large egg, separated and yolk discarded
2 teaspoons olive or canola oil
Instructions
- Peel sweet potato, then coarsely grate over medium bowl. Add egg white and stir until thoroughly combined. Make four patties.
- Heat oil in large skillet over medium-high heat. Cook patties until golden brown and crispy, about 2 to 3 minutes per side.
