Watermelon and Mint Gazpacho
Cold soups like this watermelon gazpacho can help you hydrate when you’re coping with symptoms such as nausea.

It can be difficult to drink enough fluids when you’re feeling nauseous. Try this gazpacho to hydrate with just enough flavor.

Ingredients

2 pounds watermelon, seeded and chopped
¼ cup fresh cilantro, chopped, plus more for garnish
3 tablespoons fresh lime juice
2 tablespoons fresh mint leaves, chopped, plus more for garnish
2 tablespoons olive oil
1 large tomato, chopped
1 large cucumber, peeled and chopped
Salt and pepper to taste

Instructions

  1. In a blender, combine watermelon, cilantro, lime juice, mint leaves, olive oil, tomato, and cucumber and puree until smooth. Add salt and pepper to taste.
  2. Pour the gazpacho into a bowl and refrigerate.
  3. When ready to serve, garnish with cilantro and mint leaves.
