Cinnamon Banana Pancakes

Ingredients

2 large egg whites or ¼ cup liquid egg whites
1 ripe medium banana, mashed
2 tablespoons instant oats
¼ teaspoon cinnamon (optional)
Cooking spray
Sugar-free maple syrup, plain yogurt, or creamy nut butter (optional)

Instructions

  1. In medium bowl, whisk egg whites until frothy. Add banana, oats, and cinnamon, if using, and stir until combined.
  2. Heat large nonstick skillet over medium heat. Lightly coat pan with cooking spray. Spoon batter onto hot skillet to form three small pancakes. Cook until golden brown, about 2 to 3 minutes per side.
