This hummus is simply delicious. Packed with protein, edamame makes the perfect snack when you need a midday boost.
Ingredients
2 cups frozen shelled edamame
2 tablespoons tahini
2 cloves garlic, peeled
2 tablespoons olive oil
1 tablespoon cilantro leaves
Juice of 2 lemons
Salt and pepper
Instructions
- Thoroughly rinse fresh produce under warm running water for 20 seconds.
- Boil water in a medium saucepan. Add edamame and cook 1 to 2 minutes. Drain edamame and rinse under cold water to prevent it from cooking further.
- Add cooked edamame, tahini, garlic, olive oil, cilantro, and lemon juice to a food processor or blender and pulse until smooth. Add salt and pepper to taste.
- Serve immediately or transfer to an airtight container. Hummus can be stored up to 3 days in the refrigerator.
